Our chef, Sébastien Graize, opens his kitchen to the world of his guest, Josselin Dubourg a chef distinguished by a strong culinary identity shaped by his travels and a deeply sensory approach to cuisine. He has developed a creative and contemporary universe where unexpected combinations and global influences give a true signature to his dishes. His work highlights a narrative and expressive cuisine, conceived as an experience rather than simply a meal.
Together, they have composed a four-hands culinary performance around a theme deeply rooted in our Provençal identity: the union of Land and Sea.

Dinner details
This dinner is an invitation to discover two culinary sensibilities united by the same pursuit of precision. The menu reveals bold pairings: the tenderness of Nans lamb meets the briny freshness of Cancale oysters, while langoustine, sardines, and octopus join this ballet of flavors. To conclude this unique experience, the chefs present a daring dessert where chocolate meets caviar a refined contrast of flavors and textures.
